So a friend texted me, “Can you send me that recipe for Tortillas?”

Earlier this afternoon as I was about to leave the house I realized, as I picked up my phone, that I had a text from a good friend.  She was asking for my recipe for simple Tortillas.  During a recent trip with a whole gang of our friends, I made dinner one night, brisket and chicken tacos, with homemade, healthy tortillas.  Since that time, I’ve had many compliments on them and a few requests for the recipe.  So, I decided that I should share it here and I hope you love it as much as…well, everyone that’s had them.  

What you need…

2 cups flour

3 Tbsp olive oil

1/2 tsp salt

3/4 cup water

(Yes, that’s all.)

-Skillet, spatula, cooking spray, rolling pin

In a medium bowl, combine all ingredients with your hands, squishing it together and kneading it into a ball.

Let the dough rest for 10 minutes.

Separate into 8 smaller dough balls.

Flour your work surface and rolling pin.

Roll out only two or three tortillas at a time…so they don’t dry out.

Heat skillet and spray with a light coating of cooking spray.

Place one tortilla in skillet and cook for a few minutes on each side, until it begins to brown just a bit…and its done to your liking.

That’s it!  Simple and way more healthy than I’d ever thought!
